Egg and Cheese Muffins

I had some eggs and cheese to use up but there’s so much more you can add to this! Follow this super easy recipe and add anything you fancy! This recipe makes 6 muffins and can be a perfect toddler breakfast.

  • 4 Eggs
  • 100g Grated Cheese
  • 1 tbsp. Tomato Puree
  • Anything you fancy

Method:

Preheat the oven to 180 degrees

Whisk the eggs in a bowl. Sir in the cheese and tomato puree, plus anything else you wish to add like bacon, broccoli etc.

Pour mixture into a cupcake or muffin tin.

Bake for 20 mins and enjoy!

You could even use this recipe to make mini quiches for lunch or buffet food by lining the cupcake or muffin tins with shortcrust pastry before pouring in the mixture.
