Vitamin Packed Chicken Noodle Soup

When it’s flu season, chicken noodle soup is a popular recipe for families to beat the cold. This recipe is simple to make and packed with cold fighting and vitamin filled ingredients. It’s perfect as a meal or even for a snack, we keep ours in the fridge to reheat as a mid-afternoon snack or at lunchtimes.

Serves 8 (alter ingredient amounts to suit your family)

Ingredients:

• 2 Carrots (finely chopped)
• Half head of cabbage (green or white, sliced)
• 100g Frozen broccoli florets
• 2 Garlic Cloves (finely chopped)
• 1 Small piece of ginger (peeled and finely chopped)
• 2 Chicken breasts (finely chopped)
• 2litres Chicken stock
• 4tsp Soy sauce
• 75g Dried noodles

Method:

• Put all the in ingredients, except for the noodles, in a large pan
• Bring the pan to the boil and simmer for 15-20 minutes, until chicken is cooked and the veg is soft
• Add the noodles to the pan and simmer for 4-7 minutes, until the noodles soften

This soup can be stored in the fridge for up to a week, so it’s perfect to cook in batches and serve as a meal or a snack throughout the week

    This looks delicious, and just right for the cold spell we’re having over here right now. Proper noodles are hard to find in Mexico, though. Spaghetti is not quite the same! #TheList

    I love chicken noodle soup! I often make it after we’ve had a chicken roast dinner, and make stock from the carcass and use any leftover meat up too. So delicious.
